Healthy New Year Asian Chicken Recipe

In between the family feasts over the holidays, I was experimenting with some much lighter fare to try to keep the calorie intake down. I tend to do a larger dinner meal at the end of the day, but I've been switching it up and doing a larger lunch, followed by a lighter dinner. Seems to be working!

This recipe of Hoisin marinated chicken skewers paired with a light Asian carrot slaw was a big hit with everyone. So here it is. Give it a try and let me know how you like it. It was a crowd pleaser for teenagers and adults.

Recipe - Asian Chicken Skewers

2 packages boneless/skinless chicken breast (approximately 4 lbs) cut into 1-inch cubes
1 bunch cilantro chopped for garnish
1 lime wedged for garnish
1 package of 6-8" bamboo skewers (approx 20 skewers)
3 Tblsp sesame oil for cooking

Marinade:
1 jar (approx 7.4 oz) Hoisin sauce
1/2 bunch green onions chopped
2-3 Tblsp fresh ginger root
4 cloves garlic minced
4 Tblsp sesame oil
4 Tblsp rice wine vinegar
1/2 lime juiced

Combine all marinade ingredients and whisk together.

Prep:
In a large plastic or glass bowl combine cubed chicken breast with the marinade. stir to coat chicken. Cover and refrigerate for 2-3 hours.

45 minutes before cooking, remove chicken from fridge and thread 3-4 pieces on each skewer. Let skewered chicken sit on a plate for approximately 30-40 minutes.

Chop cilantro for garnish. Wedge lime for garnish.

Cook:
Pre-heat a large cast iron skillet or cast iron grill on medium heat. Add sesame oil. Let skillet/grill come to temperature. Carefully add chicken skewers in batches so as not to over crowd the pan. Turn occasionally and cook until done (approx 7-8 minutes total). The chicken will develop a nice brown from the marinade while cooking.

Set cooked chicken aside and repeat with another batch of skewers until all of the chicken is cooked.

Recipe - Asian Carrot Slaw

1 package organic shredded carrots
1 red pepper minced
1/2 bunch green onions chopped

Combine above ingredients in a plastic or glass bowl. Set aside.

Slaw juice:
2 Tblsp sesame oil
2 Tblsp vegetable oil
3 Tblsp apple cider vinegar
1 1/2 Tblsp Tamari
2 Tblsp sugar
1 Tblsp finely grated fresh ginger
3 Tblsp fresh lemon juice
A couple dashes garlic powder
1 tsp black sesame seeds
1 tsp regualr sesame seeds

Combine all ingredients above and whisk together. Pour slaw juice over carrot mixture. Combine to coat, cover and refrigerate for a couple hours to let flavors combine.

Plate slaw. Add a couple chicken skewers and garnish with chopped cilantro and lime wedge. Squeeze the lime wedge over both the chicken and slaw for a fresh citrus flavor that really complements the Hoisin marinated chicken.

The leftover chicken and slaw (if there is any) goes great over fresh romaine lettuce as an Asian chicken salad with your favorite dressing.

My favorite though is the Charleston Music Hall where I'm part of the "best friends" program. It was here that I saw five outstanding - I mean truly stellar acts - put on a SHOW.
